Thats a prolapse, it happens in most livestock, I would leave her to recover and not let her lay again for as long as possible, you might get away with it, I don't think there is anything you can do other than give her time

Yeh same here, I leave the cocks in this section and let them sort themselves out, when I pair up I shut all cocks up bar one and put the hen in that I want to pair to him when she goes to his box and looks happy I shut them in and do the next pair, it doesn't take long but need to keep an eye on them to see all is well, never had too much bother

Yep, Moulting uses up a lot of their resources

Best way would be to get in touch with a local club and hope that someone will act as a mentor for advice, The only way you can determine whether a pigeon is any good is to race it, there are a lot of nice looking pigeons out there that don't perform well, Good Luck
