Why would you treat for cocci or canker if you do not know what's wrong with them?

My stock birds get it once a week this time of year. While rearing they receive it more frequently. It's heavily washed and sprinkled lightly with salt. Done it for a number of years, if no lettuce a tray of fresh water cress will go in.
