I subscribe to Feathered World magazine, where there is a section called "Breeders Cards", also, people sometimes advertise birds for sale.

Yes they will mate with each other. Usually once they are paired, they will stick with their own partner most of the time, but they will stray, and then you have a cross breed.

It's worth visiting a couple of shows, get chatting to some fanciers, get to know a little bit about the various breeds, if they breed well and so on. Ask around as to why people have settled for the particular variety they keep. Not everyone is there for the competition.
