i was thinking about this...wondering 'why not just feed barley ?'. my own thought is that wheat/ barley are carbohydrate grains whilst peas/ beans are protein. feeding a combination will balence a diet.wheat will have, typically, slightly more protein than barley. the main thing i've noticed is palatability...in my ration the wheat and maples are eaten first then the beans and finally the barley.

barley is better than wheat . wheat makes the birds skitter, according to gordon chalmers you should not use more than  5 per centmaples in your  birds diet as they are harmfull, your birds shoud be peckinf at your shoe laces just now  .                                                                                       fat birds wont lay on ten days

My rollers are on a diet of about 60% wheat, but i know a few guys who feed them 100%
